Oats as Alternative for Breadcrumbs!

I just noticed that my oatmeal is going to expire next month. Its still half the container and I dont think we'll be able to finish it all by then. I decided to grind it, add a pinch of ground pepper and garlic powder. Then took some chicken tenders and coated it a little flour, dipped it in eggwhites, rolled it on ground oats and baked it....im trying it now with some gravy and i never expected something this healthy could taste good.
In the future, Im planning to try using oats as a breadcrumb substitute. I think it will be good on salmon and veggie tempura too. Other people from a nice forum suggested that it also works good in making meatloaf!
