CHICKEN & ZUCCHINI RIGATONI

You will need:
1 lb cooked rigatoni
1 lb chicken breast, diced
1 pc zucchini, washed and cut into half-rounds
3 tbsp minced garlic
3 tbsp minced onion
1/3 cup sweet corn kernels
1 tsp garlic powder
½ tsp chili pepper flakes
½ cup extra virgin olive oil
½ cup lemon juice
salt & freshly ground pepper
carrot shavings for garnishing
grated parmesan cheese
Procedure:
1. Saute garlic and onion in olive oil. Add diced chicken. Cook for 3 minutes.
2. Add corn and zucchini. Season with garlic powder, chili pepper flakes, salt & pepper.
3. Remove from heat. Toss rigatoni.
4. Add lemon juice and some more extra virgin olive oil. Sprinkle grated parmesan on top and garnish with carrot shavings.
