Seafood Lentil Hearty Soup
You will need:
1 cup lentils
1 cups mixed seafood
1 medium sized onion-finely chopped
2-3 cloves garlic-minced
1 tsp. minced ginger
1 medium can diced tomato
1/4 cup short pasta of your choice
2-3 cups chicken stock
1 cup baby spinach
salt & pepper
cheese crackers
Method:
1. Cook lentil in a separate pot by boiling it until it pop open. Drain & set aside.
2. Saute garlic, onion and ginger in oil. Add mixed seafood and cook for 5 minutes.
3. Add in tomatoes and let it simmer for a couple more minutes before adding chicken stock. Bring to a boil.
4. Add short pasta and cook until al dente.
5. Add the lentils that you set aside as well as the baby spinach.
6. Season with salt & pepper.
7. Serve with cheese crackers or saltines.
